When temperatures rise during Britain’s unpredictable warm spells, homemade keto ice lollies offer a cooling alternative to sugar-laden supermarket options. With fresh berries from UK farms and full-fat dairy, they fit comfortably within low-carb macros.

Why traditional lollies don’t work

Standard ice lollies contain 15-30g of sugar per 100ml. A typical Tesco own-brand orange lolly has 18.9g carbohydrates, nearly a full day’s keto allowance. Even sugar-free varieties often use maltitol or other high-glycemic sweeteners that can spike blood glucose. Research suggests artificial sweeteners may trigger insulin responses similar to sugar in some individuals (Bueno NB et al., 2013).

Building a better lolly

The perfect keto ice lolly combines:

  • Liquid base: Double cream (£1.20 for 300ml at Aldi), coconut milk, or unsweetened almond milk
  • Natural sweetness: 3-5 fresh raspberries or blackberries per lolly (2g net carbs)
  • Flavour boost: Lemon zest, vanilla extract, or cocoa powder
  • Sweetener: Erythritol or stevia blends (avoid maltitol)

What this means in practice

During last year’s July heatwave (when temperatures hit 32°C in London), these proved popular:

Creamy Strawberry (per lolly):

  • 50ml double cream (1.6g carbs)
  • 2 chopped strawberries (2g net carbs)
  • 1 tsp erythritol (£4.50 for 250g at Sainsbury’s)

Freeze in silicone moulds from Wilko (£3 for 6). Total: 3.6g net carbs. Compare to a Calippo (22g carbs).

Texture tips

Avoid icy results by: 1. Blending berries into the cream base 2. Adding 1 tsp vodka or gin (alcohol doesn’t freeze) 3. Stirring halfway through freezing
